【摘要】:Theenergyinputratetestisusedtoconfirmthattherapidcookovenisoperatingproperlypriortofurthertesting.Preheatenergyandtimecanbeusefultofoodserviceoperatorstomanagepowerdemandsandtoknowhowquicklytherapidcookovencanbereadyforoperation.Idleenergyrateandpilotenergyratecanbeusedtoestimateenergyconsumptionduringnon-cookingperiods.Cooking-energyefficiencyisapreciseindicatorofarapidcookoven''senergyperformancewhilecookingatypicalfoodproduct.Ifenergyperformanceinformationisdesiredusingafoodproductotherthanthespecifiedtestfood,thetestmethodcouldbeadaptedandapplied.Energyperformanceinformationallowsanendusertobetterunderstandtheoperatingcharacteristicsofarapidcookoven.Productioncapacityinformationcanhelpanendusertobetterunderstandtheproductioncapabilitiesofarapidcookovenasitisusedtocookatypicalfoodproductandthiscouldhelpinspecifyingthepropersizeandquantityofequipment.Ifproductioninformationisdesiredusingafoodproductotherthanthespecifiedtestfood,thetestmethodcouldbeadaptedandapplied.1.1Thistestmethodevaluatestheenergyconsumptionandcookingperformanceofrapidcookovens.Thefoodserviceoperatorcanusethisevaluationtoselectarapidcookovenandunderstanditsenergyconsumption.1.2Thistestmethodisapplicabletogasandelectricrapidcookovens.1.3Therapidcookovencanbeevaluatedwithrespecttothefollowing(whereapplicable):1.3.1Energyinputrate(see10.2),1.3.2Preheatenergyconsumptionandtime(see10.3),1.3.3Idleenergyrate(see10.4),1.3.4Pilotenergyrate(ifapplicable)(see10.5),and1.3.5Cooking-energyefficiency,cookingenergyrate,andproductioncapacity(see10.6).1.4Thevaluesstatedininch-poundunitsaretoberegardedasstandard.Nootherunitsofmeasurementareincludedinthisstandard.1.5Thistestmethodmayinvolvehazardousmaterials,operations,andequipment.Thistestmethoddoesnotpurporttoaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthistestmethodtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
